This dish of  rice with chicken and vegetables  combines several ingredients that are all part of a healthy and balanced diet. It is suitable for different occasions and simple to prepare. In Spain and Latin America, this dish is very popular in different variations: every family has a personal favorite. You can also combine it well with both  meat and vegetable proteins. This recipe is enough for 3 to 4 people. 

Rice with chicken and vegetables: ingredients

  • 2 tomatoes (100 g)
  • Olive oil
  • 1 onion (60 g)
  • Salt and black pepper
  • 1 cup of rice (240 g)
  • 2 cloves of garlic (6 g)
  • 3 chicken breasts or chicken thighs (300 g)
  • 1 cup peas (150 g)
  • 5 saffron threads (1 g)
  • 1/2 green or red bell pepper (40 g)
  • 1 cube of chicken stock

Instructions

  • First, heat some oil  in a large frying pan over medium heat.
  • Meanwhile, cut the onion, bell pepper and garlic into pieces and put them in the pan.
  • When the onion, bell pepper and garlic are a little soft, add salt and pepper to taste and cook for 5 minutes. Stir the pan occasionally.
  • The vegetables are done when they are soft enough to cut with a ladle without using force.
  • Now cut the chicken  into small pieces or strips and add them to the vegetables. Turn the heat up, but not at its highest. Let it cook for 5 minutes while continuing to stir, or until the chicken has some color but is not yet golden brown.
Chicken breast

 

  • Skin the tomatoes  and cut them into the same size as the other vegetables. Then add them to the chicken and cook for another 5 minutes, stirring.
  • In another pan, bring water to a boil and add the rice and chicken stock.
  • Let it cook for a few minutes, but do not let the rice cook  completely. Four to five minutes is sufficient.
  • Drain the rice and add to the chicken and vegetables. Stir well.
  • Add the saffron for color and flavor. If you don’t have saffron, you can use turmeric to color the dish. However, the taste is not the same as saffron.
  • Then add the peas along with salt and pepper. The cooking liquid is now very flavorful, and as the rice cooks, it will absorb it, so don’t be too stingy with the salt!
  • Keep stirring  until the rice with chicken and vegetables is completely cooked. For more flavor, you can also add a little of the rice cooking water and let it cook until it has the texture you want.
  • Remove from fire. Then cover the pan with a clean tea towel and let it steam for 5 minutes. This ensures that the rice gets a good taste and is al dente .
