1. Braised squid with potatoes

  • water
  • bay leaf
  • 1 kg potatoes
  • 1 kg squid
  • 3 garlic cloves
  • pinch of salt and pepper
  • 60 g onion
  • 1 red bell pepper
  • 1 peeled tomato
  • 200 ml white wine
  • 1 green pepper
  • 1 teaspoon oregano
  • 3 tablespoons olive oil
  • 1 teaspoon pimenton or paprika powder

Preparation

  • Clean the squid well and then cut it into pieces.
  • Then fry the garlic and onion in oil in a frying pan. Make sure to cut the garlic and onion into small, thin pieces. 
  • When the garlic is brown, it’s time to add the bell pepper. Also cut it into small pieces beforehand. Bake them until they are soft.
  • Then cut the tomato into pieces and add it to the rest. When these pieces become soft, it’s time to add the squid. Make sure the squid is completely covered with this mixture.
  • Season this sofrito mixture with a pinch of salt, pepper and paprika. Then add the bay leaf.
  • Then add the wine and water to the mixture. Make sure the squid is completely covered with these liquids. At the end of cooking, the squid should be soft. 
  • Finally, sprinkle the meal with some coriander. You can combine this meal with baked, fried or steamed potatoes.

2. Juicy stuffed squid

  • 200 ml white wine
  • 500 g squid
  • 1 can of peas
  • 2 ripe tomatoes
  • 300 g shrimp
  • 1 green pepper
  • 1 red bell pepper
  • 200 g rice
  • 1 large onion
  • olive oil
  • 4 eggs
  • pinch of salt
  • skewers

Preparation

  • Carefully clean the squid. First remove the skin and then cut the tentacles into small pieces. Then do the same with the shrimp.
  • Then cut the vegetables into small pieces. Fry them in a small pan with some olive oil. Start with the onion, then the bell pepper and finally the tomato.
  • Add a pinch of salt and sugar to counteract the sour taste of the dish. Boil the mixture on low heat for 30 minutes. 
  • When these 30 minutes are up, it’s time to add the squid. Then cook all ingredients for another 10 minutes. Then add the prawns and let it simmer for another 5 minutes on a small fire. When the 5 minutes are up, remove the pan from the heat and let it cool.
  • Then take the squid and fill it with the mixture. Make sure to keep some of this sofrito mixture. After you’ve filled the squid, close it with the skewers. Then stir-fry the stuffed squid until it is golden brown.
  • When the stuffed squid is golden brown, cook it in a saucepan with some wine and water. Let this simmer for 25 minutes, until the squid is soft and cooked.
  • Then add the rest of the mixture, the peas and the rice. Then sprinkle everything with some salt and wait until the rice is cooked.
  • Finally, remove everything from the fire and serve the dish as you wish. This stewed squid is a dish on its own, but you can choose to combine it with fries or salad.
